Coal Yard New Make Bourbon Whiskey

Albany's first spirit since Prohibition

Every batch of Coal Yard is an expression of the true nature of craft distilling. It reflects a scientific attention to detail and great care taken in every step of the production process. We start by milling whole grains for the mash. After fermentation, the milled grain goes right into the still with the rest of the wash, thick and unfiltered. From there, it is distilled out in a single pass-a slow process, but one that ensures a clean spirit with a distinctive flavor. Once collected, it is interred for a very brief stay in used cooperage in order to best preserve the smooth, fresh flavor of the grain-almost all of which is grown on New York State farms. Coal Yard is the same base spirit that is put into charred, new, American white oak barrels and aged to become Ironweed.

Our Original Albany rum pays homage to Albany's first distillery, which was established in the mid-18th century and stood just a short distance from where our distillery stands today. The Quackenbush Still House produced an unaged rum from Caribbean molasses and Hudson River water, fermented with wild yeasts in huge, open wooden vessels. We use modern equipment, better yeast, and a more suitable water supply, but we follow the same recipe and use the methods of our predecessors. Bright tropical notes shine through the rich, earthy flavor of the Caribbean cane, giving way to a long, creamy, butterscotch finish.

Nearly a century after Prohibition ended Albany's rich tradition of distilling spirits, Ironweed whiskey captures the both the essence of a bygone era and the spirit of modern innovation. Made exclusively from whole grain, water, and yeast, Ironweed acquires its rich color and much of its distinctive flavor from time spent aging in oak. It is produced in small batches using New York State grain, and great care is taken on every step along the way; it is truly a craft spirit, from mill to bottle.

Ironweed Rye Whiskey

New York's traditional whiskey

The production of both bourbon and rye are virtually identical: 100% whole grain mashed, fermented, distilled, and placed in brand new charred American white oak barrels. It is the ingredients that distinguish them. Bourbon is made from mostly corn, while rye is made with mostly rye; we source both grains from New York State. Corn gives bourbon its distinctive sweet flavor and notes of dried fruit, while rye makes a much drier, spicier whiskey. Both are easy to sip neat, but also lend themselves well to being poured over ice or shaken into cocktails.

Although technically the Coal Yard spends a few minutes in wood to meet the legal classification of whiskey, for all intents and purposes it is an unaged spirit. It is the most direct expression of what we do. While it's not what most people are used to in a whiskey, it's actually how whiskey was consumed for the first several centuries since it started running off stills. If you're interested in the essence of the grains that go in to making an award-winning aged whiskey, this is the where to find it.

Quackenbush Still House Albany Amber Rum

An updated Albany classic

Our Albany Amber is the aged expression of the Original Albany Rum, picking up its distinctive color as well as rich spice and vanilla notes from a long rest in our used Ironweed barrels. In addition to smoothing out the spirit, the time in oak transforms the earthiness of the original into a more subtle, warm flavor. Our Quackenbush Rums are excellent neat or on the rocks, and they also bring an exciting layer of character to cocktails.
